Easy Weeknight Dinner : Kale Pasta


So quick and easy! I love this dish because it’s packed with so much nutrients from the kale but you’d never know it based on how good it tastes. I usually make this with grilled chicken and roasted asparagus on the side.

  • 1 lb spaghetti

  • 4 garlic cloves chopped

  • 1 tablespoons red pepper flakes

  • 1 lemon

  • 4 tablespoons olive oil

  • 5 large leafs of kale, stems removed and finely chopped

  • Salt and pepper to taste

  • 1/2 cup freshly grated Parmesan cheese


  1. Heat a medium skillet over low heat. Add the olive oil and garlic, and saute for about 5 minutes. Add the kale and saute for about 10 minutes, until the kale is wilted down. Set aside.

  2. Bring a large pot of salted water to a boil. Cook pasta until al dente according to package directions. Drain, toss with a bit of olive oil to prevent sticking, then put back in the pot on low heat.

  3. Squeeze one lemon on pasta, add the kale and garlic mixture and stir until combined.

  4. Add the red pepper flakes, and salt and pepper to taste. Sprinkle with parmesan cheese et voila!
